Salad Eating Monster

salad eaterI’m a salad eating monster. After months of shoveling carbs down my throat, while rehabbing my ankle and watching too much TV, I have rediscovered the salad. I put together reduced fat feta, grape tomatoes, some sliced turkey and lettuce chopped up. It’s delicious!

I’m trying to make healthier choices and so I’m starting with salad. There will be more additions in the future. I know this may seem pedestrian, but they are my baby steps to getting healthier and happier.

I still have a soft spot for empty calories, like cookies, cake and fries, but I have to think about my goal to lose weight and be in better shape by the end of September or October. The more I exercise the better I feel and the more motivated I am to eat better.
